A friend of mine turned me onto this raw vegan banana split recipe and I’m so glad she did because it’s sooo healthy and yummy! Even though this is a much healthier version of ice cream, made primarily with bananas and coconut milk, it still tastes amazing, and you don’t have to feel guilty eating it!

The frozen bananas and frozen strawberries give the ice cream a soft serve texture after blending, so I only use an ice cream maker to firm it a bit. But  if you don’t have an ice cream maker, you can just place the mixture in a bowl in the freezer until you reach the desired consistency.

Personally, I think the bananas sweeten the ice cream enough, but if you want it sweeter, you’re welcome to add a tablespoon of sweetener.

Ingredients
  • 1 ½ banana, frozen
  • ½ cup strawberries, frozen
  • 1 cup coconut milk or unsweetened almond milk
  • 2 tbsp cocoa powder
  • 1 tsp liquid sweetener
  • 1 tbsp shredded coconut, for topping
  • 1 tbsp cacao nibs or dairy-free chocolate chips, for topping
  • 2 fresh strawberries, sliced, for topping
  • 1 fresh banana, halved, for topping
Instructions
  1. Blend 1 frozen banana, cocoa powder, sweetener and ½ cup coconut milk in blender until smooth.
  2. Pour into medium sized bowl and place in freezer until frozen, stirring occasionally.
  3. Blend ½ frozen banana, frozen strawberries, and ½ cup coconut milk in blender until smooth.
  4. Pour into medium sized bowl and place in freezer until frozen, stirring occasionally.
  5. Once ice cream is frozen, scoop into a bowl.
  6. Slice fresh banana in half lengthwise, then place ½ banana on each side of bowl.
  7. Top with cacao nibs or chocolate chips, shredded coconut and sliced strawberries.
