I love fruit in my salads. I also love to make my own salad dressing. For those of you who’ve never made your own dressing, it’s so easy! For this mango and goat cheese salad recipe, I use a tasty homemade mango lime dressing. All you need are mangoes, honey, lime juice, coconut oil and sea salt.
If you want to make this salad a meal that will fill you up, top it with a cup of quinoa for a protein and fiber boost!

Ingredients
- For dressing:
- ¼ cup mango, chopped
- 1 tsp raw honey, melted
- 1 tbsp coconut oil, melted
- 1 tsp lime juice
- 1 tbsp warm water
- For salad:
- 2 cups spinach leaves
- ¼ cup mango, chopped
- ½ avocado (4-5 slices)
- 1 tbsp raw unsalted almonds, sliced
- 2 tbsp crumbled goat cheese
- Sea salt and pepper, to taste
Instructions
- Prepare dressing by combining all dressing ingredients in a blender and blending until pureed. Set aside.
- Add spinach leaves, avocado slices and mango chunks to a large salad bowl.
- Pour the dressing over the salad mix and toss to coat.
- Top with crumbled goat cheese and sliced almonds.
- Season with sea salt and pepper if desired.
