I’ve been dabbling with a lot of keto-friendly brands lately, mainly because it would be great to be able to eat bread and pasta again without all the carbs. I’ve tried a few cauliflower-based brands that I wasn’t crazy about, but this weekend, I discovered the motherlode of all things low-carb: THIN SLIM FOODS.

GUYS. Check them OUT. I have never been so excited for a package to arrive on my doorstep. I tried the bread, pasta, and everything bagels, and they were all DELISH.

Adios cauliflower!

I haven’t tried their chocolate products because they contain sugar alcohols, which upset my stomach, but their breads and pasta don’t contain any sugar products (and their bread and bagels are ZERO net carbs. YEAH.)

I have a feeling this is going to be the first of many keto-friendly recipes containing their products, but I started with this one because… three words. MAC. AND. CHEESE.

Need I say more?

For this recipe, you’ll need to purchase their Impastable low-carb elbows (8g net carbs!) And for all you Amazon Prime members out there, you can also purchase them on Amazon, however it looks like they’re a few dollars more and some Amazon members reviewed their bread arrived moldy, so I’d advice purchasing from the company directly. (Mine arrived perfect 🙂 )

Just a few notes before we get to the recipe:

You can use cheddar cheese for a more traditional mac and cheese, or mozzarella for more of a white cheddar flavor.

Salt makes a HUGE difference. Don’t forget the salt! I also suggest black pepper and a few favorite spices (garlic powder, red pepper flakes, etc.)

The pasta cooks very quickly. I boiled it for about 5-10 minutes and it was ready.

Also, if you don’t have cream or almond milk, feel free to use 1/2 cup milk or cream of your choice.

Keto Mac and Cheese Recipe (With Real Low-Carb Pasta!)

  • 2 cups uncooked Thin Slim Foods Impastable Low Carb Pasta Elbows
  • 1 cup shredded cheddar cheese or mozzarella cheese
  • ¼ cup unsweetened almond milk
  • ¼ cup cream
  • 1 tbsp butter or Earth Balance non-dairy butter
  • Sea salt and pepper, to taste
  1. Boil pasta in a pot for about 5-10 minutes until soft. Strain.
  2. Pour pasta back into the pot and add cheese, butter, milk, and cream.
  3. Stir over low heat until all ingredients are combined and cheese is fully melted.
  4. Season with spices.
  5. Serve immediately.
Makes 2 servings.
