Very Berry Oatmeal Cups

  • ¾ cup rolled oats (¼ cup ground, ½ cup whole)
  • ½ banana
  • 1 egg
  • 2 tbsp plain nonfat Greek yogurt
  • 2 tbsp unsweetened almond or coconut milk
  • ¼ cup liquid sweetener of choice
  • 1 tbsp vanilla protein powder
  • ¼ cup mixed berries (blueberries, raspberries, blackberries)
  • ½ tsp vanilla extract
  • ½ tsp baking soda
  • Dash of cinnamon and sea salt, to taste
  1. Preheat oven to 350°F.
  2. Place ¼ cup oats in a blender or food processor and blend until they reach a flour-like consistency.
  3. Add banana and egg and blend again until smooth.
  4. Pour mixture into a bowl and stir together with the rest of ingredients, except for berries, until smooth.
  5. Pour muffin mix into baking cups or lightly greased muffin pan.
  6. Fold in berries.
  7. Bake for about 20 minutes until top of muffins are firm.
  8. Cool for 5-10 minutes before serving.
Makes 4 muffins.
