I follow a lot of food-related Instagram accounts, and always find myself drawn to photos of breakfast toasts. Yet, whenever I’m making breakfast, I tend to draw a blank on what to make.
So I decided to make a list of my favorite breakfast toasts! Technically, some of these could be lunch toasts, too.
Here are 10 super easy breakfast toast recipes for a healthy start to your day. I recommend using sprouted grain bread to make it even healthier!
1. Egg Avocado Toast
This one is pretty straightforward – drizzle your toast with olive oil and top it with a fried egg, a few avocado and cherry tomato slices, and season it with sea salt and pepper. (I also add a dash of cayenne for a spicy kick!)
2. Tomato Tofutti Toast
Tofutti is a dairy-free cream cheese spread that’s delicious and tastes just like regular cream cheese. Spread 1-2 tbsp of Tofutti onto your toast, top with 2 tomato slices, and season with sea salt and pepper. (You can also use sliced cucumber instead of tomatoes if you prefer!)
3. Berry Chia Jam Toast
You can find my recipe for berry chia jam here: Homemade Berry Chia Jam
Top a slice of toast or english muffin with 1-2 tbsp of jam. Chia seeds provide a great superfood boost to start your day!
4. Homemade Nutella Toast
You can find my recipe for homemade Nutella here: Homemade Nutella Recipe
I love to spread a tablespoon of homemade Nutella onto my toast and top it with sliced strawberries and almonds. Bananas are also a great topping!
5. Honey Almond Goat Cheese Toast
This is one of my favorites, and could be a great lunch toast as well (or you can add another slice of bread and make it a sandwich!) Drizzle a layer of honey onto the toast, then top with 2-3 tbsp crumbled goat cheese and 1 tbsp sliced almonds.
6. Heirloom Tomato Avocado Toast
Another yummy toast you can eat for breakfast or lunch! Mash 1/2 avocado onto toast, top with a few heirloom tomato slices, and season with sea salt and pepper.
7. Peanut Butter Banana Chia Seed Toast
An old childhood favorite topped with nutritious chia seeds!
8. Veggie Toast with Mustard & Vegenaise
This is my favorite lunch toast. I actually love it as a sandwich on a bagel thin, but it works as toast too. Spread a layer of dijon mustard and Vegenaise (dairy-free mayonnaise) onto the toast, then top with a handful of arugula, 2 slices of tomato, 4 slices of cucumber, and 1 tbsp diced red or white onion. (For those of you who haven’t tried Vegenaise, try it! You’ll never eat real mayo again!)
9. Cinnamon Raisin Sprouted Grain Toast
Another old childhood favorite. Spread a layer of Earth Balance (dairy-free butter) onto a slice of sprouted grain toast, then sprinkle with coconut palm sugar and cinnamon. You can also add sliced apples for a tasty twist!
10. Grilled Caprese Toast
I love Caprese salads, so why not make it a toast? Top your toast with a thin slice of part-skim mozzarella (you can grill it or place it in the microwave if you want the cheese melted), layer with 2 slices of tomato and a few basil or spinach leaves, then drizzle with olive oil and balsamic. (And remember, you can always make it a sandwich too!)
