Lentil Sloppy Joes

  • 1 cup cooked brown lentils
  • ½ cup tomato sauce
  • 2 tbsp green bell pepper, diced
  • 2 tbsp yellow onion, diced
  • 1 tbsp mustard
  • 1 tbsp soy sauce
  • 1 tbsp coconut palm sugar
  • 1 tsp apple cider vinegar
  • 2 whole wheat buns
  • 1 tsp olive oil
  • Sea salt, pepper, garlic powder, and cinnamon, to taste
  1. Heat 1 tsp olive oil in a skillet over low heat.
  2. Add peppers and onions and saute for 5 minutes until soft.
  3. Increase to medium heat and stir in remaining ingredients.
  4. Season with spices and cook for 5-10 minutes, stirring occasionally.
  5. Place bun in the toaster until crisp, then top with sloppy Joe filling.
  6. Serve immediately.
