Coconut Popsicles (Dairy-Free, Sugar-Free, Vegan)
Recipe type: Dessert
  • 2 cups coconut milk
  • 1 cup unsweetened shredded coconut
  • 2 tbsp pure maple syrup
  • 2 medjool dates
  1. Fill a pot with about an inch of water, add dates, and bring to a boil.
  2. Boil dates in water for 2-3 minutes until soft. Remove pits.
  3. In a blender or food processor, combine coconut milk, shredded coconut, maple syrup and pitted dates.
  4. Blend until smooth.
  5. Pour the mixture into popsicle mold and freeze overnight.
  6. Before removing popsicles from mold, run mold under hot water for 10 seconds.
Makes 4 popsicles.
