Homemade Berry Popsicles

Ingredients
  • ¾ cup coconut milk
  • 1 ½ cup strawberries
  • 1 ½ cup mangoes
  • 1 tbsp agave nectar (or liquid sweetener of choice)
Instructions
  1. In a medium sized bowl, combine the sweetener and coconut milk, stirring well.
  2. Add strawberries and ½ of the sweetened coconut milk to a blender and blend until pureed.
  3. Pour the mixture into the popsicle mold, filling up ½ of the way.
  4. Freeze the bottom layer of the pops for at least 20 minutes until they’re firm (but not completely frozen.)
  5. Add mangoes and the rest of the sweetened coconut milk to a blender and blend until pureed.
  6. Pour into popsicle mold for the top layer.
  7. Insert popsicle sticks.
  8. Freeze for about 3 hours until completely frozen.
Notes
Makes 4 popsicles.
